INDUCTION MARKET The principle of induction technology is based on the idea that heat is generated by an electric and magnetic field the moment your pot and powered cooktop touch. The reaction generated during this contact allows the immediate transfer of heat from the hob to the pot (and the food inside). And so the cooking process begins. Due to this reason, the temperature of the cooktop, which is not in use, remains cool to the touch. This feature substantially decreases the risk of burns and accidents. Also, with induction cooking, the time required to heat the pot and food is much faster. Induction cooking also has energy efficiency benefits. With heat flow that is concentrated only inside the contact zone and proportional to the pot diameter there is less heat wasted which results in lower energy costs.
